Ritz Poppy Seed Baked Chicken
I got this recipe from my friend, Mindy, many years ago. I love this chicken dish. It is so simple to make and so flavorful. The Ritz crackers really make it. Enjoy!
- 8 boneless skinless chicken breasts
- 2 cans cream of chicken soup
- 1 cup sour cream
- 2 Tablespoon poppy seeds
- 1 roll Ritz crackers, smashed
- 2 Tablespoon butter
Preheat oven to 375. Brown chicken in skillet. Season with salt and pepper or a little garlic salt. Place in 9X13" pan. Mix cream of chicken, sour cream and poppy seeds together. Pour over chicken. Cut butter into the Ritz crumbs to make a crumb topping for the dish. Sprinkle over chicken and sauce mixture. Cover with foil. Bake for 30 minutes. Uncover and let cook an additional 10 minutes or until chicken is 165 degrees. We loved ours with some rosemary potatoes and a vegetable. Enjoy!
