Easy Raspberry White Chocolate Chip Cookie

This is so simple to make that I almost feel guilty. This is a spin from my other cake mix cookie recipe. I really wanted a great raspberry cookie that wouldn't go mushy. I put this together and I was so excited when it came out perfect. Enjoy!

  • 2 boxes Jiffy Raspberry Muffin MIx
  • 1 teaspoon baking powder
  • 2 whole eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups white chocolate chips
  1. Preheat oven to 350 degrees. Mix all ingredients together.  Using a cookie scoop, drop onto greased pan.  Bake for 10 minutes.  Allow to cool on pan.  Store in airtight container.  

  2. Different variations include:  chocolate with Andes chips, chocolate with chocolate chips, yellow with chocolate chips, etc. etc. Be creative.  Have fun with it and Enjoy!!!
