Coconut Chocolate Chip Cookies
I was a little skeptical when I first made these cookies. I mean, who puts cornflakes in cookies? But ohhhhh, I am so happy I did. These cookies are chewy AND crunchy – the perfect combination for those of us who are texture freaks. You will love this recipe from my sweet little sis, Staci. Enjoy!
- 1-1/2 cup butter or margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 whole eggs
- 1 teaspoon vinegar (yes, vinegar)
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups oatmeal
- 2 cups cornflakes
- 1 cup coconut
- 1 package chocolate chips
Preheat oven to 350 degrees. Cream butter and sugars. Add eggs and vinegar. In a separate bowl, mix together: flour, baking soda, baking powder and salt. Add to butter/sugar mixture and stir. Add oats, cornflakes (do not crush), coconut and chocolate chips. Using a cookie scoop, drop onto cookie sheet sprayed with cooking spray. Bake for 10-12 minutes. Let sit on pan to cool. Store in airtight container. Makes about 48 cookies.
