I was a little skeptical when I first made these cookies. I mean, who puts cornflakes in cookies? But ohhhhh, I am so happy I did. These cookies are chewy AND crunchy - the perfect combination for those of us who are texture freaks. You will love this recipe from my sweet little sis, Staci. Enjoy!

Ingredients
1-1/2cupbutter or margarine
1cupsugar
1cupbrown sugar
2wholeeggs
1teaspoonvinegar (yes, vinegar)
2cupsflour
1teaspoonbaking soda
1/2teaspoonbaking powder
1/2teaspoonsalt
2cupsoatmeal
2cupscornflakes
1cupcoconut
1package chocolate chips
Instructions
Preheat oven to 350 degrees. Cream butter and sugars. Add eggs and vinegar. In a separate bowl, mix together: flour, baking soda, baking powder and salt. Add to butter/sugar mixture and stir. Add oats, cornflakes (do not crush), coconut and chocolate chips. Using a cookie scoop, drop onto cookie sheet sprayed with cooking spray. Bake for 10-12 minutes. Let sit on pan to cool. Store in airtight container. Makes about 48 cookies.
