Our Favorite Cheesy Funeral Potatoes
Why are these called Funeral Potatoes? I live in Utah where the Mormon church is prevalent. Whenever there is a funeral, the church members kick in to provide food for all the extended family and friends after the service. The classic meal has always included this type of potato casserole with various versions. This one is our family favorite. I discovered the idea of putting the fried onions on top by accident. It ended up being a hit with everyone so I pretty much make it this way all the time now. Hope you enjoy!!
- 1 bag shredded hash brown potatoes or southern style hashbrowns with onion and peppers (approx. 30 oz.)
- 2 cans cream of chicken soup
- 1 cup sourcream or plain yogurt
- 2 cups grated cheese ((I use the fiesta mix))
- 2 Tablespoon dried onion
- 1 2.5 oz. Real Bacon Pieces
- salt & pepper, to taste ((I use about 1/2 Tablespoon each))
- 1 container fried onions
Preheat oven to 375*. Spray 9×13 pan with cooking spray. Mix all ingredients together, except fried onions. Spread in pan. Top with a little extra cheese, if desired. Sprinkle fried onions on top. Bake until thoroughly melted and bubbling; about an hour. (If you thaw your potatoes beforehand, this cooks quicker. You can do that in the microwave for about 5 minutes on high).
You can also omit the fried onions and substitute bread crumbs, potato chips or whatever you desire. You can also add broccoli or other veggies. Use your imagination. Super easy and comforting.
