Mama King's Roasted Rosemary Red Potatoes

I am always on the lookout for those perfect recipes that stick. This has been the best one I have used and seems to be my fail safe. If you have the opportunity to use fresh rosemary, go for it. It really makes a difference. Enjoy!

  • 1 3/4 pound small red potatoes, quartered
  • 1 small onion, diced
  • 1/4 cup olive oil
  • 1 1/2 teaspoon dried rosemary (crushed)
  • 2 cloves garlic (minced (or 2 teaspoons))
  • 1/4 teaspoon garlic salt
  1. Preheat oven to 425 degrees F. In a bowl, combine all ingredients. Transfer to a foil lined cookie sheet. Bake uncovered for 25-30 minutes or until potatoes are tender and browned. I like to stir the potatoes mid-way to keep coated and to insure even browning. Enjoy!
