Kinzie's Chicken Enchiladas
These are so simple to make and taste wonderful. This is a simple family pleasing meal. With just a few ingredients, you can quickly whip up a great meal for you and your family.
- 2 cups cooked and shredded chicken (canned works great)
- 1/2 cup sour cream
- 1 cans Cream of Chicken Soup
- 1- 4oz. can chopped green chilies
- 3 cups shredded cheese (Fiesta Blend is best)
- 1 package soft flour tortillas (10-12)
Warm chicken in frying pan. Add soup, sour cream and chilies. Stir until warm. Pour mixture into bowl. Add 1 1/2 cups grated cheese. Mix. Reserve about 1/4 of mixture for topping. Spoon the rest into tortillas and roll, seam side down. Spread remaining mixture over enchiladas and top with extra cheese as desired. Bake at 375 degrees or until cheese is hot and bubbly. Serve with desired toppings, such as lettuce, tomatoes, etc.
