Lemon Cherry Cheese Pie
If you are looking for a tasty creamy no-bake dessert, this is the one. I got this recipe from my mother-in-law, Diane. This is one of my family's favorites, especially my husband, Robert. I make this for all his birthdays, Valentines and Father's Day. He loves cherry, but this also tastes great with blueberries, raspberries, etc. Enjoy!
- 2 regular graham cracker crusts (or make your own)
- 2 8oz. packages cream cheese, room temperature
- 2 cans sweetened condensed milk
- 2/3 cup lemon juice
- 2 teaspoons vanilla
- 1 can cherry topping, or as desired
When I first started making this, I would skip out on the lemon juice. I couldn't figure out why my pie never set. It is very important you follow the instructions. There is a chemical reaction with the lemon juice, etc. that brings this together.
Beat cream cheese until smooth and light. Add sweetened condensed milk, lemon juice and vanilla. Beat until smooth and creamy. Mixture should be thickened, like a pudding. Beat until you achieve this. I can usually achieve this within 3 minutes, but there have been times when things didn't want to cooperate and I had to beat it much longer. Don't give up.
Pour into prepared pie crusts. Let set for about an hour minimum. Serve with favorite topping. Enjoy!
