Soft Gingerbread Cut-Out Cookies

When I was a little girl, our neighbor brought these cookies over during the Halloween season.  I absolutely loved them.  Soon, I started babysitting for her and later she gave me the recipe.  This is a favorite of mine that I try to make every fall.  These would also be so good during the Christmas season.

  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup shortening
  • 1 whole egg
  • 1/4 cup molasses
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 2 teaspoon soda
  1. Preheat oven to 350*.  Cream sugar, brown sugar and shortening.  Add egg and molasses.  Mix.  Add remaining ingredients to form a soft dough.  Roll dough out to 1/4″ and cut to desired shapes.  Bake on greased cookie sheets for about 10-12 minutes.  Do not overbake.  Decorate with cream cheese frosting.
