Mama King's Ginger Molasses Cookies

I absolutely love Ginger Molasses cookies……but only when they are soft and chewy. Lofthouse used to make this cookie and it was one of my favorites. When I moved to a small town they didn't carry these. So, when I found this recipe years ago, I fell in love. They have the perfect balance of molasses and ginger. Enjoy!

  • 3/4 cup vegetable shortening
  • 1 whole egg
  • 1 cup sugar
  • 4 Tablespoons molasses
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 2 teaspoons soda
  • 1 teaspoon ginger
  • 1/2 teaspoon salt
  • coarse sugar
  1. Preheat oven to 400 degrees F. Cream shortening, egg, sugar and molasses. Add flour, cinnamon, soda, ginger and salt. Mix. Using a cookie scoop measure dough and then roll into ball with hands. Coat each cookie by rolling in coarse sugar. Place on greased cookie sheet. Bake for 10 minutes. Cool on pan. Enjoy!
