Banana Muffins
This is one of my favorite recipes for banana muffins. You can also top with chocolate chips, mix in some raisins, etc.
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 2 whole eggs
- 3 medium ripe bananas, mashed
- 2 cups flour
- 1 teaspoon baking soda
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon salt
Preheat oven to 350*. This makes about 18 muffins. Line muffin tin with paper liners. Set aside.
Mash bananas in mixing bowl. Gradually add all other ingredients and mix together thoroughly. Batter will be slightly bumpy. Using a 2-1/2 Tablespoon scoop; scoop one spoonful into each muffin tin. This is key for muffins that are the same size. Bake for about 20-25 minutes or until toothpick inserted comes out clean.
