Applesauce Bread
I made this with my grand-daughter today. The smells in my home were incredible. This is best if made a day ahead of serving. I notice that if I wait for it (as well as other sweet breads) a day before serving, they are softer and sweeter.
- 1 cup sugar
- 1 cup applesauce
- 1/4 cup oil
- 3 egg whites, slightly beaten
- 3 Tablespoons milk
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Preheat oven to 350*. Spray standard loaf pan with cooking spray. In a mixing bowl, combine sugar, applesauce, oil, egg whites and milk together. In a separate bowl, sift the remaining dry ingredients together. Gradually add the dry ingredients to the first mixture as mixer is running. After fully incorporated, pour batter into loaf pan. Bake for 60-70 minutes; or until toothpick inserted comes out clean. Let sit in pan for 10 minutes before releasing from pan. Let cool before storing in large plastic bag.
