Ingredients
- 1 cup butter softened
- 1/2 cup granulated sugar
- 1 cup DARK brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2-1/2 cups all-purpose flour

- 1 Tablespoon ground cinnamon
- 3 Tablespoons granulated sugar

- Preheat oven to 300°F and lightly grease baking sheets.In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.Add eggs and vanilla extract and mix until combined.In a separate bowl, whisk together flour, baking soda, and salt.Gradually add dry ingredients to the wet ingredients and mix until a soft dough forms.In a small bowl, combine cinnamon and sugar for the coating.Using a cookie scoop, scoop dough and roll into balls.Roll each dough ball in the cinnamon sugar mixture.Place cookies on prepared baking sheets, spacing evenly.Bake for 18–20 minutes, until set but still soft.Allow cookies to cool on the baking sheet before transferring.
