- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup butter
- 2 large eggs
- 1 cup milk
- 1 (15 ounce) can pureed pumpkin
- 1/2 cup raisins or chocolate chips, etc.

- Preheat oven to 400°F. Line muffin pans with paper liners or lightly grease.In a large mixing bowl, whisk together flour, baking powder, salt, sugar, cinnamon, and nutmeg.Add melted butter, eggs, milk, and pumpkin purée. Mix until just combined.Fold in chocolate chips, raisins, or nuts if using.Using a 2½-tablespoon scoop, divide batter evenly among muffin cups.Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.Allow muffins to cool slightly before removing from pan.
Notes
- Do not overmix the batter to keep muffins tender.These muffins freeze well once fully cooled.Optional toppings include a light cream cheese drizzle or crumb topping.Pumpkin purée (not pumpkin pie filling) is required for best results.
