Hearty Slow Cooker Beef Stew
Ingredients
- 1-2 pounds beef stew meat slightly browned
- 2 1/2 pounds potatoes peeled, if desired, and cubed
- 1 can corn drained
- 1 package beefy onion soup mix
- 2 cans cream of mushroom soup
- 1 can tomato sauce
- 3 stalks celery
- 1 cup carrots, sliced
- 3/4 cup water

- Lightly grease a slow cooker.If desired, brown the stew meat in a skillet before adding it to the slow cooker.Add potatoes, carrots, celery, and corn to the slow cooker.Place beef on top of the vegetables.Pour cream of mushroom soup and tomato sauce over the ingredients. Sprinkle evenly with the onion soup mix.Add water and gently stir to combine.Cover and cook on low for 7–8 hours or on high for 4–6 hours, until beef is tender and vegetables are cooked through.Stir before serving.
Notes
- Browning the beef adds extra flavor but is optional.Can also used ground beef.Additional vegetables or barley can be added if desired.Leftovers reheat well and taste even better the next day.
