A classic slow cooker beef stew made with tender beef, potatoes, vegetables, and a rich, savory sauce. Perfect for an easy, comforting dinner.

2 1/2 pounds potatoespeeled, if desired, and cubed
1can corndrained
1packagebeefy onion soup mix
2canscream of mushroom soup
1cantomato sauce
3stalks celery
1cupcarrots, sliced
3/4cupwater

Lightly grease a slow cooker.If desired, brown the stew meat in a skillet before adding it to the slow cooker.Add potatoes, carrots, celery, and corn to the slow cooker.Place beef on top of the vegetables.Pour cream of mushroom soup and tomato sauce over the ingredients. Sprinkle evenly with the onion soup mix.Add water and gently stir to combine.Cover and cook on low for 7–8 hours or on high for 4–6 hours, until beef is tender and vegetables are cooked through.Stir before serving.
Notes
Browning the beef adds extra flavor but is optional.Can also used ground beef.Additional vegetables or barley can be added if desired.Leftovers reheat well and taste even better the next day.
