Grandma’s Peanut Butter Fingers

These peanut butter chocolate bars are rich, layered, and incredibly satisfying. A soft oat-based base is topped with a creamy peanut butter layer and finished with a smooth chocolate topping, making them perfect for parties, holidays, or make-ahead desserts.

My grandma was a lunch lady for as long as I can remember. People from all over came to each lunch at the cafeteria in those days. This is one of our whole extended family’s favorite recipes. I messed around with it a bit with the topping and it came out great. I hope you enjoy this. This is one of those recipes that are dear to my heart as I think about Grandma Parry every time I bake these. Enjoy!

Grandma's Peanut Butter Fingers

Soft peanut butter oat bars layered with a creamy peanut butter filling and topped with a smooth chocolate layer. Rich, classic, and perfect for sharing.

Ingredients

Base Layer

  • 3/4 cup butter softened
  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup quick rolled oats

Peanut Butter Layer - (You could also just use creamy peanut butter as your layer)

  • 8 ounce cube cream cheese room temperature
  • 1/4 cup butter softened
  • 1/4 cup peanut butter
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 2 Tablespoon heavy cream (or milk)
  • 3-4 cups powdered sugar

Chocolate Layer - (You could also just use chocolate frosting as your top layer)

  • 3 cups chocolate chips
  • 1 cup heavy cream
  • 6 cups powdered sugar or as needed

Instructions

Make the Base

  • Preheat oven to 325°F.
    Cream butter, peanut butter, brown sugar, and granulated sugar until smooth.
    Add egg and mix well. Stir in baking soda, salt, vanilla, flour, and oats.
    Press dough evenly into a greased 12×17-inch baking sheet.
    Bake for 12 minutes. Remove from oven and allow to cool completely.

Peanut Butter Layer

  • Beat cream cheese, butter, and peanut butter until smooth.
    Add salt, vanilla, and heavy cream.
    Gradually mix in powdered sugar until thick and spreadable.
    Spread evenly over cooled base.

Chocolate Ganache Layer

  • Heat heavy cream until hot but not boiling.
    Pour over chocolate chips and stir until smooth.
    Add powdered sugar as needed to thicken slightly.
    Spread over peanut butter layer.
    Chill until set before slicing into bars.

Notes

  • The peanut butter layer can be simplified by spreading plain creamy peanut butter if desired. You can also use chocolate frosting for the chocolate layer.
    Store bars refrigerated for clean slicing and best texture.
    These bars freeze well for longer storage.
