My grandma was a lunch lady for as long as I can remember. People from all over came to each lunch at the cafeteria in those days. This is one of our whole extended family's favorite recipes. I messed around with it a bit with the topping and it came out great. I hope you enjoy this. This is one of those recipes that are dear to my heart as I think about Grandma Parry every time I bake these. Enjoy!
Course Dessert
Ingredients
3/4cupbutter, softened
3/4cuppeanut butter
3/4cupbrown sugar
3/4cup sugar
1wholeegg
1/4teaspoonsoda
1/2teaspoonsalt
1/2teaspoonvanilla
1-1/2cupflour
1-1/2cupquick rolled oats
Peanut Butter Layer - (You could also just use creamy peanut butter as your layer)
18oz.cube cream cheese, room temperature
1/4cupbutter, softened
1/4cuppeanut butter
1pinchsalt
1teaspoonvanilla
2Tablespoonheavy cream (or milk)
3-4cupspowdered sugar
Chocolate Layer - (You could also just use chocolate frosting as your top layer)
3cupschocolate chips
1cupheavy cream
6cupspowdered sugaror as needed
Instructions
To Make the Bars
Preheat oven to 325 degrees. Cream butter, peanut butter, brown sugar and sugar together. Add eggs and mix. Add remaining ingredients. This will make a soft dough. Press down into a greased 12X17 cookie sheet. Bake for 12 minutes. Remove from oven and let cool.
Peanut Butter Layer
You can also use just creamy peanut butter if you like. I have also switched the peanut butter layer and chocolate and just melted chocolate chips on top of oat mixture and used the peanut butter frosting on top. It's totally up to you.
Cream butter and cream cheese together. Add peanut butter and cream. Mix in salt, vanilla and heavy cream (or milk). Add powdered sugar until desired consistency. I like mine a little more creamy for this recipe. Pour over cooled bars and spread evenly to desired thickness. Refrigerate while you make the ganache.
Chocolate Ganache Layer
As I stated above, you can also just use frosting. If you decide to use the store bought variety, warm it in the microwave for about 30 seconds and then pour onto the brownies and spread. Here's the ganache instruction:
Melt the chocolate chips and heavy cream together in the microwave or stovetop. Do not get too hot. Stir in the powdered sugar. Let cool a bit before pouring over the peanut butter layer and then carefully spread. Enjoy!
