Creamy Parmesan Baked Ritz Chicken

Tender baked chicken coated in seasoned yogurt and finished with a Parmesan-Ritz cracker crust. This easy oven-baked recipe delivers moist chicken with a lightly crisp topping using simple, everyday ingredients.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups Ritz Crackers crushed
  • 1/2 cup butter melted
  • 1 (16 oz.) container plain yogurt
  • 1/2 teaspoon seasoning salt
  • 1 teaspoon garlic powder
  • 3 Tablespoon parmesan cheese (I like to use the kind that comes in a bottle for this)

Instructions

  • Preheat oven to 350°F. Lightly spray a 9×13-inch baking dish with cooking spray and set aside.
In a shallow bowl, combine the crushed Ritz crackers, seasoning salt, garlic powder, and Parmesan cheese.
In a separate bowl, stir the yogurt until smooth. Dip each chicken breast into the yogurt, coating completely, then roll in the cracker mixture to coat evenly.
Place the coated chicken breasts into the prepared baking dish. Drizzle the melted butter evenly over the top.
Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and continue baking for another 20–30 minutes, or until the chicken reaches an internal temperature of 165°F and the topping is lightly golden.
For a crispier finish, broil for 1–2 minutes at the end, watching closely. Serve warm.

Notes

  • Plain Greek yogurt can be used in place of regular yogurt for a slightly thicker coating.
For extra crispness, remove foil for the final portion of baking or broil briefly, watching closely.
Chicken breasts can be sliced in half lengthwise for more even cooking.
This recipe pairs well with rice, roasted vegetables, or a simple green salad.
