4boneless, skinless chicken breasts
2cupsRitz Crackerscrushed
1/2cupbuttermelted
1(16 oz.) containerplain yogurt
1/2teaspoon seasoning salt
1teaspoongarlic powder
3Tablespoonparmesan cheese(I like to use the kind that comes in a bottle for this)
Instructions
Preheat oven to 350°F. Lightly spray a 9×13-inch baking dish with cooking spray and set aside.In a shallow bowl, combine the crushed Ritz crackers, seasoning salt, garlic powder, and Parmesan cheese.In a separate bowl, stir the yogurt until smooth. Dip each chicken breast into the yogurt, coating completely, then roll in the cracker mixture to coat evenly.Place the coated chicken breasts into the prepared baking dish. Drizzle the melted butter evenly over the top.Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and continue baking for another 20–30 minutes, or until the chicken reaches an internal temperature of 165°F and the topping is lightly golden.For a crispier finish, broil for 1–2 minutes at the end, watching closely.
