Kinzie’s Tomato Basil Soup
I love this recipe. Kinzie made this for us a few times (after I was on a continuous search for a recipe like this) and my whole family savored every spoonful. Enjoy!
- 1 Tablespoon olive oil
- 2-3 Tablespoons garlic
- 1/2 onion, minced
- 1 28 ounce can crushed tomatoes
- 1 28 ounce can crushed tomatoes with basil
- 1 1/2 cup chicken stock
- 1 Tablespoon sugar
- 1/2 teaspoon dried oregano
- 2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup half & half
- 12-15 large fresh basil leaves (or 2-4 Tablespoons dried)
In a dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Add onion and saute until translucent.
Add garlic and saute another 30 seconds.
Add crushed tomatoes (juice and all), chicken stock, oregano, sugar, salt, and pepper.
Bring to a low simmer. Cook uncovered, for 15 minutes or until it has thickened.
Add the half and half, basil and season to taste with salt and pepper.
