Lemon Bars Supreme

I'll be totally honest with you—I never liked lemon bars UNTIL TODAY! This is a recipe from my mom, Irene. I made this and created a cream cheese glaze on top and voila!, this was to die for. My husband especially loved the new creation. So, although you can still make this the traditional way and you will love it, having the cream cheese made all the difference for me. Enjoy!

Crust

  • 1 cup butter or margarine, softened
  • 1/2 cup powdered sugar
  • 2 cups flour

Filling

  • 4 whole eggs, well beaten
  • 4 Tablespoon lemon juice
  • 1 teaspoon baking powder
  • 2 cups sugar
  • 1/2 cup flour

Cream Cheese Glaze

  • 1 8oz. package cream cheese, softened
  • 1/4 cup butter, softened
  • 1/3 cup canned milk or cream (can also use milk)
  • 1 dash salt
  • 3-4 cups powdered sugar
  1. To make crust

  2. Preheat oven to 350 degrees. Combine butter, powdered sugar and flour together. Press into bottom of greased 9X13" pan. Bake for 15 minutes while making filling.

Filling

  1. Mix together beaten eggs, lemon juice, baking powder, sugar and flour until smooth and creamy. Pour over baked crust. Return to oven and bake an additional 25 minutes. Make glaze while baking or, if you desire a more traditional lemon bar, sprinkle baked lemon bars with powdered sugar.

Glaze

  1. Beat cream cheese and butter together until smooth. Add salt and milk. Gradually add powdered sugar until desired consistency. I like mine to be a bit runny so it is easier to spread over hot lemon bars. Gradually pour glaze over lemon bars and carefully spread on top. Cool in refrigerator. Serve. Enjoy!
