Peach Delight
Technically this is a jello salad, but honestly, I think it is more like a dessert. I got this recipe from a lady in my church. She made it for a function we went to and I fell in love. It was peach season and so she made hers with fresh peaches. (Mine is canned). The cream cheese on top just made it amazing.
- 3 cups water
- 1-1/2 cups sugar
- 3 Tablespoon cornstarch
- 1 small orange jello
- 8 fresh peaches
- 8oz container whipped topping
- 6 Tablespoon powdered sugar
- 1 cube margarine
- 1 8oz. cream cheese
- 1/2 cup powdered sugar
- 3 cups crushed graham crackers
Combine water, sugar and cornstarch in saucepan. Heat until thickened, stirring occasionally. Add jello and peaches. Set aside to cool.
Make graham cracker crust. Combine crumbs, melted margarine and 6 T. powdered sugar. Press 2/3 of the mixture in the bottom of 9 X 13" pan. Place in fridge for about 10 minutes to harden. Remove. Carefully pour peach mixture on top.
Allow 3-4 hours to set. In a mixing bowl, combine cream cheese (softened to room temp) and 1/2 cup powdered sugar. Whip until smooth. Add whipped topping. Mix. Pour over peach mixture. Sprinkle remaining crumbs on top. Serve.
Hint: You can also use canned peaches. You will need two 28oz. cans. Drain juice into a bowl. Measure. I used the liquid from my peaches mixed with water to equal the 3 cups required at the beginning of this recipe. Then, I cut down on my sugar. I used about 3/4 cup. Also, this would be awesome to add a bit of cinnamon in the crumb mixture. Maybe 1 teaspoon.
