Slow Cooker Honey Teriyaki Chicken
I love the crock pot. I love how moist my meats end up and how simple everything is. Add some sesame seed to this for a little added flare.
- 4 boneless skinless chicken breasts
- 1 cup honey
- 1/2 cup soy sauce
- 1/2 cup onion, diced
- 1/4 cup ketchup
- 2 Tablespoon oil
- 2 teaspoon minced garlic
- 1/4 teaspoon red pepper flakes, optional
- 4 teaspoons cornstarch, dissolved in 6 Tablespoons water (or more if needed)
- sesame seeds
Spray crock pot with non-stick cooking spray. Lay out chicken breasts in the bottom of crock pot. In a separate bowl, combine the honey, soy sauce, onion, ketchup, oil, garlic and red pepper flakes. Mix well. Pour over chicken. Cook on low for 3-4 hours or on high for 1-1/2-2-1/2 hours until temperature of chicken reaches 165*.
Remove chicken onto cutting board, reserving the liquid. Mix the cornstarch mixture into the sauce. Cook on high for an additional 10 minutes while you cut up the chicken in small pieces. This should thicken the sauce. If it doesn’t you may need to add some more cornstarch. Return meat to crock pot. Stir and sprinkle with sesame seeds. Serve over rice with broccoli or any other veggie.
