Summer Poppy Seed Salad with Poppy Seed Dressing
This is a cool and refreshing salad. You can also add some grilled chicken to make it extra filling. I got this recipe from my sister-in-law, Amy. Amy is another one of my favorite cooks.
- romaine salad mix (as desired)
- spinach leaves (as desired)
- mandarin oranges (as desired)
- sliced strawberries (as desired)
- red onion, finely chopped (as desired)
Candied Almond Slices
- 2 Tablespoon brown sugar
- 2 Tablespoon sugar
- 1/2 to 1 cup slivered almonds
Poppy Seed Salad Dressing
- 3/4 cup sugar
- 1 teaspoon dry mustard
- 3/4 teaspoon salt
- 1/2 cup red wine vinegar
- 2 teaspoon red onion (finely chopped)
- 1 cup olive oil
- 1 teaspoon poppy seeds
In a small saucepan, heat together brown sugar, sugar and almonds (I put in about 1/2 Tablespoon water) and stir to keep from scorching. Once liquid is gone, spread on waxed paper to cool. Set aside.
To make the dressing: combine all ingredients and blend in blender. Make sure the onions are finely chopped.
Put salad together. Toss salad mix, spinach, fruit, onions together. Put desired amount in a bowl or on a plate. Sprinkle candied almonds on top. Pour desired amount of dressing on top. Use grilled chicken to give it a bit more substance. This is a great meal in itself.
