Super Quick & Easy Cinnamon Rolls
My little grandson was here this week. All he wanted today was some cinnamon rolls. Of course, I am going to make whatever he wants, but a 4 year old has a hard time waiting for things. So, we whipped these up together and he was a happy camper in no time. (The best part is just making them together.) 🙂 . This recipe makes a ton. You may want to half it.
- 3-1/2 cups warm water
- 3/4 cup sugar
- 1/2 cup oil (or softened butter)
- 6 Tablespoons yeast
- 1 Tablespoon salt
- 3 whole eggs, lightly beaten
- 10-1/2 cups flour
Cinnamon Sugar
- 1 cup sugar
- 1 Tablespoon cinnamon
Cream Cheese Frosting
- 1/2 cup butter, softened
- 1 8oz.cube cream cheese, softened
- 1 teaspoon vanilla
- 1-2 Tablespoons heavy cream or milk
- 3-1/2-4 cups powdered sugar
- 1 pinch salt
In a mixing bowl, combine water, yeast sugar and oil. Stir. Let sit until yeast proofs (foams). Mix in remaining ingredients and knead in mixer or by hand for about 5-8 minutes. Let sit while you prepare the rest.
Make cinnamon and sugar mixture and set aside. Melt one cube of butter and set aside. Oil counter. Roll dough out into large rectangle. This will take up quite a bit of counter. You want your dough to be about 1/4 inch thick. Spread melted butter and then sprinkle with cinnamon and sugar. Roll. I like to use a long piece of dental floss to cut my rolls. Using a knife can squish your rolls. Cut rolls about 1″ wide depending on desire. Place on greased cookie sheet or cake pans. (I like to use cake pans because my rolls rise up and not so much out)) Let rise until double. Preheat oven to 400*. Bake rolls for 12-15 minutes or until light golden brown.
Make frosting. Spread over rolls. Yum!1
