3Tablespoonsgranulated sugar
2Tablespoonsyeast

1 1/4cupwater

In a large mixing bowl, combine 2 cups flour, sugar, yeast, and salt.In a saucepan, heat water and butter to 120–130°F. Do not allow the mixture to get hotter, as excessive heat can kill the yeast.Add the warm liquid to the dry ingredients and beat until smooth.Stir in mashed potatoes and enough remaining flour to form a soft dough.Knead dough until smooth and elastic, about 6–8 minutes.Divide dough into 16–20 pieces and shape into rolls. Place in a greased 9×13-inch pan.Cover and let rise for about 45 minutes, until doubled in size.Preheat oven to 400°F.Bake for 18–22 minutes, or until golden brown.
Notes
Leftover mashed potatoes work well in this recipe.Rolls can be brushed with melted butter after baking for extra softness.These rolls freeze well once cooled.
