I am always on the lookout for those perfect recipes that stick. This has been the best one I have used and seems to be my fail safe. If you have the opportunity to use fresh rosemary, go for it. It really makes a difference. Enjoy!
Course Side Dish
Ingredients
1 3/4poundsmall red potatoes, quartered
1smallonion, diced
1/4cupolive oil
1 1/2teaspoondried rosemarycrushed
2clovesgarlicminced (or 2 teaspoons)
1/4teaspoongarlic salt
Instructions
Preheat oven to 425 degrees F. In a bowl, combine all ingredients. Transfer to a foil lined cookie sheet. Bake uncovered for 25-30 minutes or until potatoes are tender and browned. I like to stir the potatoes mid-way to keep coated and to insure even browning. Enjoy!
