I think I finally got it right. Made this this weekend for Father's Day. All my family said I finally got it on the dot. So, enjoy. You can add a little chopped celery to this if you want too.
Course Salad
Ingredients
6-10wholepotatoes, peeled, diced and boiled until tender(I used 7 jumbo potatoes)
9wholeeggs, hard boiled
1/2cuponion, finely chopped
2largewhole dill pickles, diced finely with juiceor about 1 cup
2cupsmayo
2Tablespoonmustard
1Tablespoonsugar
1teaspooncelery salt
salt & pepper, to taste
paprika to sprinkle on top for garnishif desired
Instructions
In a large bowl, combine mayo, mustard, celery salt, onion, chopped pickles and other seasonings. Mix. Chop eggs, except 3. Add to mixture and stir. Stir in potatoes. Make any other adjustments to your liking. Slice the other eggs and put on top. Sprinkle with paprika. Serve. Enjoy!
