Ingredients
1mediumavocado, chopped
1wholelime
1canblack eyed peas, drained and rinsed
1canblack beans, drained and rinsed
1largeroma tomato, seeded and diced
1/2mediumonion, finely diced
1Tablespoonminced garlic
1smallbunch of cilantro, chopped
1/4cupjalapeno, finely chopped
1/2cupitalian dressing (can use fat free)
1Tablespoonred or white wine vinegar
1can corn
salt & pepper, to taste
Instructions
Chop peeled avocado into a separate bowl and squeeze lime juice over to prevent avocado from browning. Combine all the other ingredients into a large bowl. Add avocado. Stir. Serve with tortilla chips.
