Chocolate Chocolate Chip Muffins

Anytime I think of these muffins, I think of my two daughters, Heather and Kalani, who love these. I used to buy these at Costco, but realized I could make an even better version here at home. These are excellent. Enjoy!

Ingredients

  • 1 cup plus, 2 Tablespoons flour
  • 3/4 cup sugar
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pinch baking powder
  • 3/4 cup water
  • 1/2 cup vegetable shortening
  • 1 whole egg
  • 1/2 teaspoon vanilla
  • 1 package chocolate chips

Instructions

  • Preheat oven to 350 degrees. Cream sugar and shortening. Add egg. Add remaining ingredients. Mix. Line cupcake holders with cupcake liners. Using large cookie scoop (2-1/2 T.), scoop mixture into liners. Should be about 2/3 full. Bake for 20 minutes. Enjoy!
