Homestyle Chicken Noodle Soup
Ingredients
- 6-8 cups chicken broth
- 5 whole carrots peeled and sliced
- 2 cups potatoes peeled and diced
- 1 whole green pepper minced
- 5 stalks celery washed and sliced
- 1 cup cooked chicken or turkey, shredded or diced can use canned chicken if desired
- 2 teaspoon italian seasoning
- 1/4 cup dry minced onion or use fresh if desired
- 1 pkg dry egg noodles or frozen
- salt and pepper to taste
Instructions
To Make the Soup
- In a large stockpot, combine chicken broth, carrots, potatoes, green pepper, celery, Italian seasoning, dried onion, salt, and pepper. Bring to a gentle boil over medium-high heat.Reduce heat slightly and simmer until vegetables are tender, about 20–25 minutes.Add cooked chicken (or turkey) and egg noodles. Continue cooking until noodles are tender, about 8–10 minutes, stirring occasionally.Taste and adjust seasoning as needed. Serve hot.

Notes
- Leftovers store well in an airtight container in the refrigerator for up to 4 days.If freezing, freeze the soup without the noodles. Add fresh noodles when reheating for best texture.This soup thickens as it sits; add additional broth when reheating if needed.Using raw chicken:If starting with raw chicken, place chicken breasts or thighs in a pot and cover with water or broth. Bring to a boil, then reduce heat and simmer until fully cooked (about 15–20 minutes). Remove chicken, let cool slightly, then shred or chop and add to the soup in Step 3.
