Ingredients

  • 1 cup granulated sugar
  • 1 cup applesauce
  • 1/4 cup vegetable oil
  • 3 egg whites slightly beaten
  • 3 Tablespoons milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  • Preheat oven to 350°F. Lightly grease a standard loaf pan with cooking spray and set aside.
In a large mixing bowl, whisk together the sugar, applesauce, oil, egg whites, and milk until smooth.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Pour batter evenly into the prepared loaf pan.
Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before slicing.

Notes

  • This bread tastes even better the next day once the flavors have had time to settle.
Store tightly wrapped at room temperature for up to 3 days, or refrigerate for longer freshness.
This recipe works well as muffins—adjust baking time to 18–22 minutes.
