Dad's Favorite Creamy Casal Chicken

I am pretty sure you can find this recipe all over Pinterest with the name of Marry Me Chicken. I made this one night, but couldn't find any sun-dried tomatoes where I live. (I live in a very small town). Anyhow, I decided to use canned tomatoes and it was perfect. My husband has cancer on his lip and spicy foods kill him, so I tamed this down a bit and it was amazing. This is now his most favorite dish. Enjoy!

  • 1 Tablespoon olive oil
  • 3-4 large boneless, skinless chicken breasts
  • 2 teaspoon minced garlic
  • 1 teaspoon thyme
  • 1 teaspoon red pepper flakes (I use less because it is quite spicy)
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sundried tomatoes, chopped (or use canned diced tomatoes, drained)
  • 1/2 cup grated parmesan cheese (can also use canned if necessary)
  • fresh basil (may also use dried basil sparingly :))
  1. Preheat oven to 375 degrees. In a large skillet, heat oil over medium-high heat. Place chicken in pan and sprinkle with salt and pepper. Cook until golden brown. Transfer to a 9 X 13 inch pan. Return skillet to medium heat. Add garlic and cook for about 1 minute. Add thyme, red pepper, chicken broth and heavy cream. Keep stirring for about 5 minutes, then add the tomatoes and parmesan cheese. Return chicken to skillet and spoon sauce over all the chicken breasts. Bake until chicken temperature is 165 degrees–about 20 minutes. Garnish with basil and grated parmesan cheese, if desired.
