Chocolate Chocolate Chip Cookies (Andes Mint Also)

I love love love these. These are so moist and chocolatey. They are easy to make and everyone loves them. Chocolate is always a great dessert to go with most anything. Tonight we had a family dinner and I made one batch with kiss frosting and the other with Andes mint frosting. I LOVE mint and chocolate together. The grandkids love just the chocolate. Kinzie mentioned that these would be awesome with strawberries. YUm! Enjoy!

  • 1/2 cup vegetable shortening
  • 3/4 cup sugar
  • 1 whole egg
  • 4 Tablespoons cocoa
  • 1/2 cup milk
  • 1 3/4 cup flour
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (I like semi-sweet)
  • Andes Mint chips or bars (optional)
  • Hershey Kisses (optional)
  1. Preheat oven to 350 degrees. Cream together shortening and sugar. Add egg and cocoa. Mix. Mix in milk. Add flour, soda, salt and chocolate chips. Using a cookie scoop, spoon onto greased cookie sheets. Bake for 9 minutes. Remove from oven and allow to cool on pan. You may want to frost with chocolate frosting or try the kisses or mints.

  2. To do the Kiss version: Instead of baking for 9 minutes, set timer for 8. When timer goes off, quickly insert an unwrapped kiss in center of cookie and return to oven for 1 minute. Take out and let cookies sit on pan. After about 5 to 10 minutes, spread the melted kiss over the top of the cookie and allow it to finish cooling. YUM!

  3. To do the Andes Mint Version: Allow the cookies to cook the full 9 minutes. Remove from oven. If using the chips, carefully spoon chips over the top of the cookies and allow it to melt before spreading. If using the small rectangles, just place one rectangle on each cookie and let melt, then spread. These are mostest favorite ever. Enjoy!
