Mama King's Potato Salad

I think I finally got it right. Made this this weekend for Father's Day. All my family said I finally got it on the dot. So, enjoy. You can add a little chopped celery to this if you want too.

  • 6-10 whole potatoes, peeled, diced and boiled until tender ((I used 7 jumbo potatoes))
  • 9 whole eggs, hard boiled
  • 1/2 cup onion, finely chopped
  • 2 large whole dill pickles, diced finely with juice (or about 1 cup)
  • 2 cups mayo
  • 2 Tablespoon mustard
  • 1 Tablespoon sugar
  • 1 teaspoon celery salt
  • salt & pepper, to taste
  • paprika to sprinkle on top for garnish (if desired)
  1. In a large bowl, combine mayo, mustard, celery salt, onion, chopped pickles and other seasonings. Mix. Chop eggs, except 3. Add to mixture and stir. Stir in potatoes. Make any other adjustments to your liking. Slice the other eggs and put on top. Sprinkle with paprika. Serve. Enjoy!
