Mama King's Best Cornbread Ever

This cornbread is almost like eating cake.  It is so moist and light.  Tastes amazing with honey/butter.  I have made this with Splenda at times and it turns out fantastic.

  • 3 cups Bisquick or baking mix
  • 3 whole eggs
  • 3/4 teaspoon baking powder
  • 1/2 cup margarine, softened
  • 1/2 cup cornmeal
  • 1/2 teaspoon salt
  • 1-1/2 cup milk
  • 3/4 cup sugar or splenda
  1. Preheat oven to 350*.  Mix all ingredients in a large mixing bowl until well incorporated.  The batter will be slightly lumpy.  This is from the butter and will melt in.  Bake for 40 minutes or until a toothpick inserted comes out clean.  Serve with honey butter.
