Baked Yogurt Parmesan Ritz Chicken

Another awesome recipe from my sister in law, Amy.  This is such a flavorful and moist chicken favorite.  

  • 4 boneless, skinless, chicken breasts
  • 2 cups Ritz Crackers, crushed
  • 1/2 cup butter, melted
  • 1 16 oz. container plain yogurt
  • 1/2 teaspoon seasoning salt
  • 1 teaspoon garlic powder
  • 3 Tablespoon parmesan cheese ((I like to use the kind that comes in a bottle for this))
  1. Preheat oven to 350*.  Spray 9X13 pan with cooking spray.  Combine crackers, seasoning salt, garlic powder and parmesan in wide bowl.  In a separate bowl, pour out all yogurt and stir well.  Dip chicken in yogurt and then roll in crumb mixture.  Place in pan.  When done, drizzle melted butter over chicken.  Cover tightly with foil.  Cook covered for 30 minutes, then remove foil for another 20-30 minutes or until meat is 165*.  If you desire a crispier chicken, you can broil when done for a ew minutes to crisp the top.
